A truly ripe peach doesn't survive shipping. Most places pick them hard and green, then send them across the country to ripen in a truck. You end up with something mealy that vaguely resembles fruit. We wait until they're actually ready to eat, which means they don't keep long, require serious cold logistics, and cost more. But a peach in July tastes the way a peach should. And if it's March, you won't find one here—because it shouldn't be on your table.
Why your fruit spoils fast (and why that's the point)
Blueberries picked at peak ripeness last about three to five days before they start breaking down. Raspberries are worse—sometimes just two days if your kitchen runs warm. Most commercial suppliers skip this window entirely because ripe fruit can't handle a cross-country truck ride. They pick it hard and underripe instead, then gas it with ethylene to force softening. By the time it reaches your kitchen, the flavor window is already closing on something that never fully developed. We do the opposite. Pick when the sugar is still climbing, ship overnight in insulated boxes with ice packs stacked in. Fruit arrives ripe. Lasts a few days. That's not a flaw. That's what eating real fruit actually looks like.
Stone fruits work on a different timeline. A peach at peak ripeness in July is dense and juicy but shatters the moment a truck hits a pothole. Grocery stores avoid them for that reason alone. Instead they source from orchards picking a week early, rely on temperature shifts and ethylene gas to finish ripening in storage, and pack everything in cardboard boxes built to absorb impact. Same goes for apricots and plums. You end up with something that looks correct but tastes like sweetened nothing. Growers who understand the peach window—July through early September—exist, and we work with them. Outside those months, we don't carry them. Not because of stubbornness. Just reality.
The cold chain matters way more than people think. Respiration continues the moment fruit comes off the tree. Enzymes keep breaking down cell walls. Flavor compounds degrade slowly. 24-hour harvest window
We pick fruit in the morning when the sugar's at its peak, then ship it out the next day. That tight window stops all those volatile compounds — the stuff that actually makes fruit taste like fruit — from breaking down. Most suppliers sit around for five to seven days before they even ship, which means the flavor's already degrading before it leaves the farm.
Shelf life is intentionally short
Raspberries? You've got maybe three days. Two if your place is on the warm side. When fruit lasts two weeks, it wasn't actually ripe when it arrived at your door. Short shelf life tells you something real ripened — not something that got softened artificially in some warehouse.
Stone fruits only exist in season
A paech in March is mealy and disappointing. July through early September is the window — that's when they actually taste like peaches. Outside that we don't carry them. No exceptions, no imports, no fruit sitting in cold storage getting gassed with ethylene. It means you plan your cooking around what's ripe, not the other way around.
Cold chain is part of the product
Insulated boxes, multiple ice packs, overnight shipping — this isn't just moving boxes around. Fruit still respires in the cold, just slower. Keeping it between 32 and 38°F for under 36 hours keeps that flavor window intact. Go longer and the enzymes start breaking down cell walls faster than they should be.

Two batches of blueberries from the same farm picked a week apart taste completely different. The ripeness curve is steep. A berry picked on August 5th and another from August 12th — same variety, same farm, totally different fruit. That's why we list harvests specifically and why when it was picked matters more than what kind it is.

Why peak ripeness changes everything
Picked at the right moment
Berries hit their peak sugar around day six or seven on the bush. Stone fruits get this narrow window — soft enough to actually eat but still firm enough to make it through shipping. We pick right in that sweet spot. Miss it by a day and you've lost the whole thing.
24-hour cold chain
The fruit goes cold within a couple hours of leaving the field. Then from cold storage into an insulated box within a day. You've got it in your fridge less than two days after harvest. Every hour counts because temperature swings break down those volatile compounds — the stuff that actually makes fruit taste like fruit — way faster than you'd think.
Honest shelf life
Raspberries are done in three days. Blueberries stretch maybe five. If something's still good after two weeks, you're looking at underripe fruit. Short shelf life isn't the problem — it's actually proof the fruit ripened properly. Just plan your cooking around what you got, not around what some grocery store says you should buy.
Seasonal windows only
Peaches show up in July and early September. Blood oranges come through from December into March. Apricots exist for basically June and part of July. Once that window closes, we're done with those fruits. No imports, no pulling last year's cold-storage fruit out of a freezer, no ethylene gas tricks. You eat what's actually ripe right now.

Three things that separate ripe from shipped-green
What actually changes when fruit ripens on the plant instead of in a warehouse.
Sugar density
A ripe raspberry is going to weigh roughly 15 percent more than an underripe one. That extra weight is water and sugar stacking up in there — the fruit's had time to pack in carbohydrates. But grocery berries get picked before they hit their full sugar load, so you're essentially buying diluted fruit. And you can taste that difference. The actual mass, the density of what's in your mouth, that's what matters.
Volatile compounds
You know that smell that screams July peach? That's esters and aldehydes and terpenes — all these volatile organic compounds that build up as the fruit gets ripe. The problem is they start breaking down the second you pick it. A peach that's been sitting around for three days just doesn't smell as intense as one that came off the tree yesterday. So there's a real clock running. You pick it ripe, get it shipped fast, and eat it before that window closes.
Enzyme activity and texture
Underripe berries feel hard because the pectin hasn't broken down yet. When fruit ripens, enzymes called pectinases start softening those cell walls gradually — that's why a ripe raspberry feels delicate and a store-bought one feels like biting into a rubber ball. What you feel is evidence of whether it actually ripened. A mealy or dense texture means it ripened in storage and never developed the way it should have, because that development happens on the plant.
